Avocado Stuffed Sweet Potato

Avocado Stuffed Sweet Potato

Serves: 1 Prep Time: 45 minutes Cooking Time: 10 minutes

Ingredients

  • 1 sweet potato
  • 1 small avocado
  • 1 tomato
  • 1/2 red bell pepper
  • 1/4 red onion
  • 1/2 cup of spinach
  • 30g feta cheese
  • 1/4 lime juice
  • Handful of coriander
  • Black pepper for seasoning

Instructions

1. Prick the sweet potato with a fork and bake in the oven for 45 minutes at 200°
2. In a bowl add the avocado, tomato, bell pepper, red onion, feta, coriander, black pepper and lime juice
3. Mix around
4. Take the sweet potato out of the oven and slice it open in half. Stuff the sweet potato with the mixture
5. Serve and then enjoy!
